Grilled Peach, Chicken Arugula Salad

(Takes about – 20 minutes; Serves about – 5)
3 peaches, pitted and sliced into wedges
10 cups of arugula
2 chicken breasts steamed or grilled
4 tablespoons crumbled feta
¼ cup balsamic vinegar
1 tablespoon olive oil
2 tablespoons honey
Black pepper and salt to taste
Whisk the balsamic, honey, olive oil, salt and pepper together. Prepare grill to high heat. Place the peach slices on the grill until grill marks appear, flip and grill the other side. Remove from the grill and allow to cool. In a large bowl toss the arugula with the salad dressing. Plate the arugula and then place the chicken and grilled peaches on top. Can be served with fresh grated parmesan.
Another yummy salad to try before summer ends. This one is great to serve when the grill is already fired up for a barbeque – grill the chicken, and peaches – pineapple can be grilled too for an alternate to peaches. Consider a barbeque salad bar. For multiple guests increase the ingredients to suite your entertaining needs. Set out the arugula – without salad dressing – and allow guests to pick and choose grilled peaches, pineapple, etc. They can build their own salad. Serve with crisp and crunchy bread.
