Raw Citrus Beet Salad

Preparation Time: 20 minutes

Makes about 4 servings

3 medium to large beets, peeled and trimmed

1 valencia orange with zest (Valencia oranges are super sweet, if you can’t find Valencia make sure the orange is sweet before using)

1 lime with zest

2 tablespoons olive oil

salt to taste

½ cup chives, minced

Shred beets and add to bowl. Add zest and juice from entire orange. Add zest and juice from lime to taste. Add olive oil and toss to combine. Add salt to taste and toss to combine. Add chives just before serving.

The grated beets can be dressed and kept in the refrigerator, covered well, for a couple of days. They become more tender but don’t lose their texture, and the mixture becomes even sweeter as the beet juices mingle with the citrus. Toss again before serving.

A fair warning - while grating it, your hands will stain, and so will the bowl and utensils if made from any porous materials. Be sure to use a glass bowl, and stainless steel graters or equipment. The bright and jeweled salad certainly adds to the festivity of Christmas. Even with a staining caution, this salad is worth it. Scrumptious and yummy. And oh, so healthy. A good contrast for the rich and sweet snacks and treats over the month of December. Make enough to keep for a few days so you’ll not be tempted to nibble on Christmas treats when you’re running late.
