Red Cabbage Detox Salad

(Serves: 4 to 6; Takes about 30 minutes to make)
1 medium head red cabbage, shredded
2 bunches flat-leaf parsley, finely chopped
2 small bunches green onions finely chopped
½ cup olive oil
¼ cup fresh lemon juice
1 teaspoon salt
1/8 teaspoon black pepper
Toss the cabbage, parsley, and green onions with the olive oil, lemon juice, salt, and pepper. Tweak oil, lemon juice, salt, and pepper to taste.
A friend gave this recipe to me. I do not know where it originated. I make it when I need to discipline my eating for a few days. I mix all the veggies together and leave it in the refrigerator for at least 4 hours to allow the dressing to soften the cabbage a bit, and to allow the chopped veggies to blend. Sometimes I add a whole chopped cucumber to the salad, and I do mix up the herbs a bit. Parsley is my favorite, but I also add mint. A salad dressing variation I use is to reduce the olive oil to ¼ cup and to add yogurt to make it a bit creamier.
