Fruit Popsicles

1 lb (3 – 4 cups) blackberries

1 lb (3 – 4 cups) pears

2 tablespoons sugar, sweetener or honey

Variations:

strawberries diced apricots

raspberries and bananas (if bananas, add a dash of lemon or lime juice)

1. Place the berries and half of the sweetener in a blender and pulse until smooth.

2. Fill a popsicle mold halfway with the pureed berries.

3. Place the fruit of choice with the rest of the sweetener in the blender and pulse.

4. Fill the mold to the top, and place a popsicle stick in each. Freeze for a couple of hours until solid. Enjoy!

Rewards after a tiring day!

Unusual and interesting part of the day ... on the drive back to Windhoek (English translation means windy corner) from a rather long and tiring day- we were stuck behind a huge truck, the top was open, and out stuck a very tall giraffe and two slightly shorter ones. There they were traveling on the back of a truck peering out at the countryside rushing by.

Rewards are the seal to accomplishments. I like to expect something fun at the end of a time

consuming endeavor. The reward does not have to be anything in particular; it can be a little

thing, something simple, quick, easy and fun.

Fruit popsicles are a current treat I enjoy. They have become an incentive to complete the tasks I

set out to do. When I accomplish something, a popsicle is my celebratory reward. They are fun to

make and to share! Imagine your favorite combination of fruits – popsicle style - shared with a

group of friends after a long walk, or as a dessert. Yummy!!
