Bacon Cheese Microwave Muffins

(Prep and Setting Time – 15 minutes; Serves – 6)
3 slices bacon 1 egg 3/4 cup milk 1/3 cup vegetable oil (or butter, or bacon grease) 1 cup all purpose flour 1/2 cup sharp grated shredded Cheddar cheese 1/4 cup sugar (I use a whole lot less – 2 tablespoons) 1 tsp. baking powder 1/4 tsp. salt 1-2 tbsp. jalapeno peppers or red 1 tablespoon red pepper flakes
Microwave or pan fry the bacon until crisp. Mix all the dry ingredients together in a bowl. In a separate bowl whisk the egg, oil and milk – add to the dry ingredients and mix well. Gently stir in the bacon, cheese and peppers. Scoop into greased silicone muffin cups or a teacup / coffee mug and microwave for 4 minutes. Check to see if center is cooked – microwave for longer if needed. Or, place in a greased 9 x 9 glass pan and microwave for 8 minutes – check to see if cooked – cook for longer if needed.
Bacon for breakfast is always a good treat! This recipe would be good for left over bacon, but if you are like me this seldom happens. However, should you have a few rashers you were able to resist, this recipe would take just 10 minutes from preparation to serving. Although this recipe is intended to be a quick breakfast microwave treat, it can be baked in an oven. It does not have to be prepared as a muffin – it can be served in a cup or it can be baked in a pan – adjust the cooking time as needed. Furthermore this can be served for a brunch, or for lunch or dinner with soup or chili. Mastering this recipe will provide you with many opportunities to use it – adapt it for your taste, or to suit the meal you plan to serve it with.
