Green Pea and Lettuce Soup

(Preparation – 20 minutes; Serves – 8)
2 tablespoons grapeseed oil (or olive oil)
2 cups diced sweet onion (your choice)
1 cup cauliflower
5 cups chicken broth (or vegetable for a lighter taste)
3 cups chopped romaine lettuce
6 cups frozen peas (thaw first)
1 teaspoon salt
2 teaspoons parsley
Freshly ground pepper – white or black
Sour cream for serving
In a stock pot, heat the oil and sauté the onions until translucent. Add the broth and cauliflower – bring to a boil and allow to simmer until cauliflower is cooked. Add the romaine lettuce, peas and salt. Allow to cook for another 3 – 5 minutes. Add the parsley and seasoning. When the soup is slightly cooled blend until smooth.
This soup can be served hot or chilled. Serve with sour cream. If serving cold, add some fresh sprigs or chiffonade of mint.
This is not your normal pea soup to serve on cold and wintry evenings. It can be served on chilly nights, but it does well as a chilled soup too – one to cool down hot and balmy days. Lettuce and frozen peas makes this a different kind of pea soup! It is easy to make and would be a fun meal to make with a group of people – how about inviting your youth group over to make this, or serving it to them for an elegant occasion?
