Flapjacks

Preparation time: 10 minutes; Baking time: 30 minutes; Serves: 12
(depending on size and how many you consider a serving)
500 ml flour
3 Tablespoons raw sugar
3 ml salt
15 ml baking powder
2 eggs – beaten
250 ml milk
125 ml water
25 ml melted butter
1 tablespoon maple syrup or honey
Place all the dry ingredients into a large bowl, whisk gently. Mix beaten eggs, milk, water, melted butter and syrup together. Slowly add wet ingredients into the dry ingredients. Mix until smooth. Drop spoonfuls onto a buttered pan on medium heat. When bubbles start to form – flip over. Serve while hot.
Serve with butter, jam, marmalade’s, syrup, cream cheese, cheddar cheese, fresh fruit and berries.
Flapjacks can be frozen. To defrost either microwave for a few seconds, or place in a toaster.
Flapjacks are really pancakes – similar to the American breakfast pancake. However, flapjacks are smaller. About 4 – 5 inches in diameter. Flapjacks make a quick and impressive breakfast, or even a tea-time treat. They key to successful flapjacks is getting the pan to just the right heat. They are versatile and can be savory or sweet. For a savory flapjack omit the syrup or honey. Diced bacon, or ham can be added. Think of your preferences and give it a try. Experiment until you have your own version of this classic.
