Herbed Cottage Cheese Balls

Preparation time: 5 to 10 minutes
Refrigeration time: 2 hours
1 cup cottage cheese – well chilled
¼ cup shredded goat cheese (any other cheese could be used too)
2 teaspoons finely chopped green chillies
Pinch of sea salt
½ cup finely chopped mixed herbs (or any herb you prefer)
Mix cottage cheese, goat cheese, salt and chillies in a bowl. Roll the mixture into equal sized balls and then roll in the chopped herbs. Refrigerate for at least 1 hour. Serve on a bed of lettuce of your choice, or with toasted baguettes.
Changes in the seasons leave menu options more varied. Hot soups, stews, roasts, and chili do not meet our needs through the scorching days of summer. Nor do cooled and chilled meals give us the warmth we need on icy cold winter days. Spring and Fall days allow us to enjoy more variance. One of my diet staples is cottage cheese. I’m always looking for different ideas to use it in menus. Cottage cheese balls brings an interesting aesthetic appeal to a meal. I like mine nesting on a bed of arugula or sautéed spinach. Try this – I know you will like it. And, you can add to this recipe according to your preferences. Consider using garlic, sesame seeds (toasted), spices, etc.
