Chicken Cordon Bleu Casserole

2 pounds skinless chicken breasts, cut into chunks

½ cup bread crumbs

1 egg

1/2 cup milk

8 oz Swiss cheese, shredded (or sliced)

8 oz ham, diced

1 can (10 3/4 oz) cream of chicken soup

1 cup milk

Place the chicken chunks in a 9 x 13 baking dish. Whisk the egg and milk and pour over the chicken. Sprinkle the breadcrumbs over the chicken. Broil until breadcrumbs are golden (about 5 minutes). Remove from oven and sprinkle cheese and then the ham over the chicken. Mix the chicken soup with 1 cup of milk and pour over the chicken, cheese, ham. Bake for about 30 minutes at 350º, or until it is bubbly and done.

Chicken Cordon Bleu brings back fond memories of dinners served with love – fun times of conversation and laughter. It is still found on menus at many restaurants – but why not serve it at home to a crowd. Stuffed chicken breasts takes a lot of time to prepare, but this version simplifies it for serving a crowd. It makes perfect sense when planning for a pot-luck. This recipe will be a winner wherever you take or serve it.
