Apple Caramel Cake

(Preparation time: 30 minutes; Oven time: 1 hour; Serves: 12)
1 ½ cups flour
2 teaspoons baking powder
¼ cup apple sauce (or puree ½ apple)
2 eggs
2/3 cup plain yogurt
2 teaspoons vanilla extract
3 granny smith apples – slice thinly or dice depending on what you want the cake to look like
¼ cup sugar
¼ cup condensed milk
1/3 cup milk
Streusel topping
1 cup flour
½ cup chopped walnuts or pecans – almonds work well too
1/3 cup grapeseed oil
1/3 cup sugar
2 teaspoons cinnamon
Dash ginger
Dash nutmeg
Dash cloves
Preheat oven to 350º. Grease a 9 inch pie dish – round or square (or a bundt pan). In a bowl, mix the eggs, oil, yogurt, vanilla and sugar. Add flour and baking powder – mix well. Pour into pie dish. Place the apples over the batter. Mix the streusel ingredients together and sprinkle over the apples. Mix the condensed milk and milk together and drizzle over everything. Bake for about an hour. You can also skip the condensed milk and the milk and bake for an hour, when it is fresh out of the over drizzle ¼ cup of caramel sauce over the top. Allow to cool for your preferred amount of time – serve.
Apple cakes are always wonderful in the fall or winter. They can be enjoyed as is or slightly warmed with ice cream or whipped cream. I like mine with coffee! This recipe, as all are that we share, is perfect for sharing and taking with to church and social events. We like recipes that others can enjoy with us.
