Walnut Apple Crisp

(Serves: 8; Takes: 45 minutes)

3 tablespoons granulated sugar

1 teaspoons lemon juice

¼ teaspoon ground ginger

¼ teaspoon ground cinnamon

6 large granny smith apples, peeled and thinly sliced

½ cup all-purpose flour

¼ cup oatmeal

¼ cup packed light brown sugar

¼ teaspoon ground cinnamon

1/8 teaspoon ground nutmeg

Dash salt

1/3 cup unsalted butter, cut into pieces

½ cup chopped walnuts

Set overn to 350ºF. Grease a jellyroll pan (or baking sheet) with butter, margarine, veg oil or cooking spray. In an extra-large bowl combine 3 tablespoons granulated sugar, lemon juice, ginger, and 1/4 teaspoon cinnamon. Gently stir in apples. Transfer apple mixture to the prepared jellyroll pan. For topping, in a small bowl stir together flour, oatmeal, brown sugar, 1/4 teaspoon cinnamon, nutmeg, and salt. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Stir in walnuts. Sprinkle topping over apple mixture. Bake until topping is golden about 30 – 40 minutes.

Serve with your choice of whipped cream or ice-cream – or both!

This is a traditional dessert made almost anywhere where apples are found. It always tastes good, and always fills the kitchen with warm and inviting aroma. I don’t always use walnuts, pecans or sliced almonds are equally yummy, and apples do not always need to be granny smith. If you like yours sweeter, you can increase the amount of sugar. I like it with less sugar – the sweetness of the apples is enough for me. And, this recipe is good enough for company. Try it for your next church get-together. It will be a hit!
