Quick & Easy Lime Cheesecake

(Servings: 6

Time: 30 minutes + 2 – 3 hours to chill and set in refrigerator)

16 oz low fat cream cheese at room temperature

2 cups Greek yogurt (no Greek yogurt – strain plain yogurt over cheesecloth for about 6 hours in the refrigerator)

1/3 cup maple syrup

6 limes, juiced

10 graham crackers, crushed

Make sure the crackers are well crushed. Place the crackers in a plastic bag and roll a rolling pin over until crackers are crushed. In a bowl, blend all other ingredients together – I do it by hand, you may prefer to use a mixer. I use small iced-tea glasses to serve this – use whatever you have (mason jars for a picnic). Start with a layer of crushed crackers, spoon cream cheese mix into glasses. Layer until crackers and cheese mixture are finished. Refrigerate ‘til set. Enjoy!

This is a light and creamy dessert. Perfect after a rich meal, or as an afternoon treat. How about a late afternoon picnic. Of course, you’d need to make sure you take this along in an ice-chest with enough icepacks to ensure it does not get gooey. Imagine the surprise when this is enjoyed as the sun sets, or at a festival in the park. This is a dessert memories are to be made with!

Although I use iced-tea glasses you can do it differently. A pie-dish will work just as well. Serving this in glasses makes it a pretty to look at treat especially when topped with sliced kiwis or raspberries – maybe both! Whipped cream with a few shavings of chocolate adds decadence.
